I heard they need more pilots in the Middle East partially due to the fact that oil is cheaper and more abundant there. China and India also need more pilots due to their large population.
So how much do pilots in Dubai make annually? I know they have really good benefits such as health care, vacation, pension.
Is Dubai a better place to live in than China?

From my personal view, yes, Dubai is a much better place to live than China.
What does the price of oil to do with the demand of pilots. Anyway, you may ask the same question again finishing your studies and looking for employment.
Pensions in the Emirates are only applicable to UAE citizen. Maybe you’ll like to join the army and come to the UAE one day to be a pilot for the UAE Army. In this case you will be a Government employee and enjoy all kinds of benefits beside a great salary.
